Chef Josh Mikesell (C.E.C.) has been a popular staple with central Florida cuisine for a decade, bringing his nuanced creativity and culinary excellence to such renowned places as Walt Disney World, Carmel Kitchen & Wine Bar and, of course, Charlotte Harbor National Golf Club at Bobcat Trail, Cahoots Bar & Grill.
The Le Cordon Bleu School-inspired Mikesell presides over a diverse array of specialty dishes at The National, including Pan-Crusted Salmon and Seared Scallops, along with prime pork selections served with a sublime mushroom cream sauce.
LUNCH | Each sandwich comes fresh-to-order and with Chef Mikesell indelible personal stamp, an absurdly tasty upgrade over any restaurant or bistro in the Suncoast region.
In fact, order the Blackened Mahi (pan-seared with avocado), Classic Reuben (delectable shaved ribeye), Grilled Chicken Island (topped with smoked gouda), Cuban or California BLT … and you’ll be hooked for lunch on days when playing golf might not be in the cards.
The same sentiment goes for the Cahoots pizza, a popular house specialty. The 14-inch pizzas strike the perfect balance of baked goodness and an inviting crust that always demands at least one more bite.
Among the coveted toppings: Pepperoni, ham, salami, diced chicken, green peppers, mushrooms, black olives, banana pepper, spinach, jalapeno, anchovies and Roma tomatoes.
As for the burgers (served with fries, onion rings, sweet potato fries), Cahoots’ diverse selections are a must-have for nearly every visit to The National. The nuanced care for each burger remains the stuff of legend, or something you’d see prominently featured on a reality cooking show.

APPETIZERS | Suncoast-fresh seafood plays a starring role with the Cahoots dinner starters, particularly the Thai Shrimp Bowl, Coconut Shrimp, Grouper Bites and Tuna Poke Bowl — as Chef Mikesell offers his own spin on the Poke craze throughout the United States.
SALADS | Cahoots offers three sterling options, aside from the house and Ceasar salads, in this ever-expanding field of greens: Cobb salad (loaded with blue cheese crumbles), Asian Chicken salad and the Arugula & Watermelon salad.
DINNER | Chef Mikesell’s passion for creative specialty dishes can be felt with every entree on the Cahoots menu — from the Lobster Pasta (served in a white wine butter sauce), Gorgonzola Steak Pasta (a decadent treasure), Basil Marinated Salmon (paired with roasted vegetables and mushroom risotto) to the Jerk Chicken Skewers and Yakisoba Bowl (pan-fried chicken and steak co-mingle with a number of captivating flavors and spices).
The grille options are similarly stellar, namely the Steak Frites, Korean Ribeye, Island Mahi and Apple Bourbon Pork.
DESSERTS | Leave some room at the end of the meal. These desserts are too good to pass up … or at least as a to-go order on the way home. The current options include: Chocolate Lava Cake, Brown Butter Cake and Guava Cheesecake.
